THE 'CHOPPAH' 8" CHEF'S KNIFE

In Australia, a ‘Choppah’ (or ‘Chopper’) can be many things: a helicopter, a motorcycle, a tooth, a Toe Cutter, but here at Bainbridge Metalworks we’re believers in the Bauhaus maxim that form follows function, and thus we like to name things after what they do (in this case, chop).

THE 'MEATAXE' 7" MINI CLEAVER

In Australian idiom, to be as “mad as a meataxe” is to display a high degree of lunacy. ‘Meataxe’ is a descriptor given to large knives, but also to people (or in some case animals) who are unusually large and muscular. Those people are typically also described as a ‘boofhead’ or a ‘drongo’, but those are stupid names for a knife, so Meataxe it is.

ABOUT OUR KNIVES…

Our knives are handmade to order in our small workshop in Carroll Gardens, Brooklyn. We take pride in crafting well-made and distinctive knives and, wherever possible, we strive to make use of reclaimed, recycled and repurposed materials (from timber offcuts for our handle scales, to paper and cardboard for our packaging.)

By far our favourite steel to use in our knives is technically known as CPM S35VN, but thanks to its combination of quality, affordability and workability, it has also been dubbed the “ultimate mainstream steel”.

CPM S35VN is a premium stainless steel developed in 2009 by Chris Reeve and Crucible Industries (a New York-based steel manufacturer) using Crucible Particle Metal (CPM) technology, which helps to make homogeneous steel by distributing carbides (the hard particles in steel that allow the blade to keep an edge) evenly throughout the material.

Particle metal steel manufacturing is only done by a handful of steel manufacturers around the world and results in a high-quality blade steel specifically designed for knife making that provides superior edge retention, toughness and corrosion resistance over that of traditionally made steel.
